Description
Many international recognitions over the years have celebrated Domenico Ruffino's passion and the history of his centuries-old olive groves in Varigotti.
Olive groves that resemble English lawns, fertilized with compost produced from pruning and the pomace left from oil extraction. The oil mill, powered by renewable energies, is cutting-edge, modern, and rational, but it does not detract from the taste of the oil and the Ligurian tradition of oil production.
His oils are made from Colombaia olives, a native cultivar that is very different from the universally known Taggiasca. A walk through the olive groves and an oil tasting at the mill is a true experience of taste and history. Accompanying tourists and enthusiasts is Domenico himself, who not only offers tastings of the finest oils but also gives a real small lesson on the defects of oil and how a product of excellence should be.
